Alfredo Sauce with a Bechamel Base
If you need to make a large amount of Alfredo sauce and want to do it in a cost-effective way, starting with a bechamel sauce is a great option. Bechamel sauce is a basic white sauce that is made from a roux (a mixture of flour and butter) and milk. By adding Parmesan cheese and other ingredients, it can be transformed into a delicious and creamy Alfredo sauce.
- 1 cup unsalted butter
- 1 cup all-purpose flour
- 8 cups whole milk
- 4 cups grated Parmesan cheese
- 2 cloves garlic minced
- 2 teaspoons freshly ground black pepper
- Salt to taste
In a large saucepan, melt the butter over medium heat.
Add the flour and whisk continuously for 2-3 minutes, until the mixture forms a paste-like consistency (this is the roux).
Gradually pour in the milk while whisking continuously to prevent lumps from forming.
Continue whisking the mixture until it thickens and begins to boil, about 10-15 minutes.
Reduce the heat to low and add the grated Parmesan cheese, minced garlic, black pepper, and salt to taste.
Continue stirring the sauce until the cheese is fully melted and the sauce has thickened to your desired consistency.
Remove the saucepan from the heat and allow the sauce to cool slightly before transferring it to a large container for storage.
