Almond Flour Lemon Bars

Ingredients
  

  • For the crust:
  • 2 cups of almond flour
  • 1/4 cup of granulated sugar
  • 1/4 cup of melted butter
  • 1/4 tsp of salt
  • For the filling:
  • 4 large eggs
  • 1 cup of granulated sugar
  • 1/2 cup of freshly squeezed lemon juice
  • 2 tbsp of lemon zest
  • 1/4 cup of almond flour
  • 1/4 tsp of salt

Instructions
 

  • Preheat your oven to 350°F and grease a 9x13 inch baking dish.
  • In a mixing bowl, combine the almond flour, sugar, melted butter, and salt for the crust. Mix until well combined and press the mixture evenly into the bottom of the prepared baking dish.
  • Bake the crust for 10-12 minutes, or until golden brown.
  • While the crust is baking, prepare the filling. In a separate mixing bowl, whisk together the eggs and sugar until well combined.
  • Add the lemon juice, lemon zest, almond flour, and salt to the egg mixture and whisk until smooth.
  • Pour the filling over the baked crust and return the dish to the oven.
  • Bake the bars for 18-20 minutes, or until the filling is set.
  • Let the bars cool to room temperature, then chill in the refrigerator for at least 2 hours before slicing into bars.

Notes

Dust the top with confectioners sugar if you like the additional sweetness.
