Chile Powder Blend
A versatile spice blend that's used in many Mexican dishes, including chili, enchiladas, and tamales. It typically includes dried chili peppers, cumin, garlic powder, and sometimes other spices like oregano or coriander.

- 1/2 cup dried chili peppers such as ancho, guajillo, or pasilla
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon ground coriander
Remove the stems and seeds from the chili peppers, and toast them in a dry pan for a few minutes until fragrant.
Let cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
Mix the ground chili peppers with the other spices in a bowl and store in an airtight container.
